Questa è una di quelle ricette che si scambiano in quelle merende infinite tra tazze di te fumante e fette di torta dall’aroma e profumo che riempiono l’animo. Il ricordo legato a questa torta rimarrà sempre impresso nel mio cuore e quel freddo pomeriggio di ottobre riscaldato dalle chiacchere di una cara amica e coccolato dalla sua torta ha ancora i colori accesi di un ricordo recente che ha, però, la veneranda età di 10 anni!!!! Grazie F. per avermi regalato un pezzo di paradiso.
- 2 mele rosse tagliate a fettine sottilissime
- 120g farina
- 200g zucchero di canna
- 100g di burro
- 3 uova
- 1 vasetto di yogurt
- 1 bustina di lievito per dolci
- buccia di limone
- cannella in polvere
- granella di nocciole (1 o 2 cucchiai)
Montare il burro con lo zucchero fino a raggiungere la consistenza di una crema; continuare a montare aggiungendo un uovo alla volta e la cannella. Incorporare per ultimo lo yogurt, la farina, il lievito e gli altri ingredienti con movimenti circolari dall’alto verso il basso.
Versare l’impasto in una tortiera e disporre sopra questo le fettine di mele spingendole in ultimo nell’impasto stesso (torneranno a galla, ma non preoccupatevi). Infornare a 180° per 30-40 minuti. Servire tiepido con panna montata o come piace a me con una bella porzione di gelato.
Aggiornamento dell'ultimo minuto: Questa mattina ho rifatto al torta perchè le boccucce di lupo che girano per casa l'avevano finita tutta, ho fatto una piccola variazione aggiungendo 2 cucchiai di uvetta all'impasto...vi lascio immaginare che bontà!!!

Apple cake
This is one of those recipes taken in a neverending afternoon among hot tea and slices of aromatic cake that warms soul. I remember the first time I met this cake: a cold afternoon in october, heated by a good friend and cuddled by her pie. This memory will be in my mind for ever and has the brilliant color of a recent fact but happened about 10 years ago. Thanks F. for giving me a bit of paradise every time I remember that afternoon.
- 2 red apples sliced
- 120g flour
- 200g brown sugar
- 100g butter
- 3 eggs
- 125ml white yogurt
- baking powder
- lemon rind
- powdered cinnamon
- chopped hazelnut (1 or 2 spoons)
Whisk butter with sugar until it became creamy, add an egg at a time and the cinnamon. Mix the flour to the other ingredients and stir with the cream . Put the dough in a tin and cover with sliced apples. Push apples in the dough and bake at 180°C for 30-40 minutes. Serve warm with cream or vanilla icecream.
Last minute update:
This morning I had to make the pie again because my relatives ate it all! I made a little variation adding raisins. It has become more tasty than ever.
